This is a quick salad that is packed with nutrients and tastes great! You can add some chicken or shrimp to this for a complete meal. Great for lunch and stores well in the fridge if you have leftovers. If you haven’t tried quinoa yet you are missing out! It’s delicious and goes with almost anything, sort of like rice. You can use it in pasta dishes, salads, stir fry dishes and more!
Quinoa has become popular in a lot of recipes because it is gluten free. I usually find it at Costco in a large bag, but it can be found in most health food stores these days.
A great tip for cooking quinoa; use broth instead of water for more flavor!

Quinoa Vegetable Salad
Ingredients
- 1 cup Quinoa cooked and cooled down
- 1/4 cup Sugar Snap Peas (Microwave for 1 min to soften if preferred) chopped
- 1 medium tomato chopped
- 1 medium cucumber chopped
- 1 small fig chopped
- 2 tablespoons olive oil
- 1 tbs lemon juice
- 1/2 tsp garlic powder
- 1/2 tsp black pepper to taste
- 1/8 tsp sea salt to taste
