Best pancake recipe ever! Super tall, light and fluffy, they don’t get all mushy when syrup is added, they are excellent for breakfast!
The kids love making pancakes on a Sunday morning and this is the best recipe on the internet! They are light and fluffy and taste amazingly delicious. They’re also easy to make so they’re simple enough for a weekday breakfast too! Add some butter and syrup to the top and the kids will enjoy them. Did i mention adults love these too? If you have guests coming over on the weekend these are perfect to make for a crowd. The recipe is easy to double and these are always a hit. After all, who doesn’t love pancakes! You can add some variations to these, like adding chocolate chips or blueberries. Sometimes I do some of each. You can also add berries and whipped cream to the top instead of, or with your syrup. I love adding real maple syrup to the top, it’s the best! A sprinkle of cinnamon is always nice too!
When we have family traveling here and stay at our house, we always make pancakes. Its such a great breakfast idea because it’s filling. Great with bacon and sausage too!
These can also be made for supper! Ever want to surprise the kids at supper time with something fun? Pancakes are a great surprise! The kids will be so surprised to see pancakes for supper but they’ll love the idea!
Ever hear the term, ‘flat as a pancake?’ That doesn’t apply here! These pancakes are awesome because they don’t go flat. They are nice and tall and fluffy every time!
I remember, when I was young my Mom use to make pancakes for our family all the time. I loved it and now it’s awesome to be able to make them for my family as well. I hope you enjoy these!

Light & Fluffy Pancakes
Ingredients
- 3/4 Cup buttermilk (see note for how to make buttermilk)
- 1 Cup all-purpose flour
- 2 Tbsp white sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 large egg
- 2 Tbsp butter melted
- 1 tsp vanilla
Instructions
- Combine the dry ingredients in a bowl.
- In a smaller bowl, whisk the buttermilk milk, egg, vanilla and melted butter together.
- Pour into the dry ingredients and whisk until most of the lumps are gone, but DO NOT OVER BEAT!!
- The batter will be thick, don't add any more liquid. LET THE BATTER SIT Let sit for 10 minutes, until you see bubbles in the batter
- GENTLY spoon out (don't pour out) 1/2 cup of batter and place it on a buttered grill or frying pan.
- Cook until bubbles appear on the surface of the pancake and then flip with a spatula and brown the other side.

They’re delicious. This recipe makes 4 fairly large pancakes. I at 2 and froze 2 for later. Pop them in a toaster or microwave.

No, because the leavening agents start to work immediately when the liquid is added, so the pancakes won’t rise when baked the next day.

Near the top it says 1Tbls vinegar to 1 cup milk, but at the bottom it says 2Tbls to 3/4 cup milk. ??

Its the same recipe I use. Note: The flour makes all the difference. Do not use self rising. I like bread flour.
